Raw celery salad
Background information
Quite used in all European cuisines, celery’s history is long. If I mention Tutankhamun, you will realise how long (ok, around 1330 B.C. long). Now it has grown to be used pretty much worldwide, with more success in some countries. Speaking about Romania for example, celery belongs to the same group as red wine. We are talking about a group of ‘edibles’ which are incredibly beneficial for women, but to be eaten/ drank by men
So, people say that CELERY cures or prevents impotence, cures or prevents cancer, burns fat, decreases blood pressure, regulates hormonal disfunctions, detoxifies, and can be used as a diuretic because it contains many proteins and minerals (proteins A, B, C, K, PP and minerals like potassium, zinc, calcium, phosphorus and magnesium).
Ingredients:
1 medium celery root
1 medium carrot
4 potatoes
1 egg
1 cup of oil
1 small spoon of mustard
seasoning (salt + pepper)
How to:
Peel and boil the potatoes. After they are boiled, mash them in a purée and let the latter chill a bit. Peel the celery and the carrot and grate them (of course, with a grater). Prepare the mayonnaise using the yolk, the oil and the mustard (the mustart is present first of all as a stabilizer/ emulsifier, and only secondarily to sharpen a bit the taste of the mayonnaise).
Add the grated raw celery and carrot to the mayo and after mixing them together, add the potato purée as well. Boil the egg white separately, then add it to the salad. Season with salt and a tint of pepper as per individual taste.
Note:
1. perfect side dish for chicken or turkey steaks.
